Cooking is one of my simple pleasures. I love learning new recipes, watching the Food Network (Chopped, Iron Chef and Cupcake Wars just to name a few) and the art of being able to replicate a healthier, cheaper version of a dish you would otherwise order at a restaurant, is a challenge I welcome with open arms. If you’ve read my grocery guide, you know that I have a very specific way of grocery shopping and meal prepping, due to my busy schedule and numerous food intolerances. Also, with all the periodic food recalls that happen and my own individual germaphobic ways, it’s just nice to know exactly what I’m putting into my body because I made the food myself. In today’s post, I want to give you that peace of mind. Over time I have mastered a few recipes that have become my go-to dinner meals each week, and I would be remiss if I didn’t share them with you.

Prose Pasta – 2 Ways

The following recipe details 2 versions of my pasta recipe. You can make a seafood medley with a homemade olive oil sauce or a beef bolognese version with a red sauce. Whichever option you choose, all of the pasta itself is plant-based (i.e. made from lentils or vegetables). In the video, I also describe a spaghetti squash option as well.
