Hey friends, I’m back at it again with another one of my favorite homemade recipes – crock pot chicken. This dish is near and dear to my heart (and stomach haha) not only because of how it tastes, but also because of how incredible and genius the crock pot itself is. Everyone, student or otherwise, needs a crock pot. This pot is a busy person’s and lazy cook’s dream. All you do is throw random things into a pot and turn it on and let the pot do the rest. How great is that?!
Anyway, before I ramble on too long about kitchen devices, let’s get into today’s post, which is all about how to make crock pot chicken. Similar to my last recipe post, I have included a video tutorial you can follow as well as a downloadable infographic with detailed measurements you can reference when you make it. This meal is so versatile, simple, easy, quick, cost-effective and perfect for meal prepping. You can serve it with veggies, rice, potatoes, use as a stock for soup/stew or just enjoy it on its own!
I’ve mentioned this in my grocery guide post, but I find it imperative to reiterate here that although I enjoy cooking, I don’t always have the time, patience or skills to successfully do it. This is why I’ve developed what I call, the HAC method (half-assed cooking). If you’ve ever watched Sandra Lee’s Semi-Homemade show on Food Network, it’s pretty much the same concept. I partially cook and I partially buy, so the things I make are not fully made from scratch, but it’s enough to fit in with my schedule, lifestyle and it’s a healthier alternative to not making it myself at all. I’m all about balance, folks! What I’m getting at, is that the recipes you see on here will be based on that method and mindset. If you want gourmet level stuff, you won’t find that here. If you want quick, simple and healthy, you’re right where you need to be.
